So what is a Vegetarian Food Challenge?
Simply take a limited list of ingredients then come up with a great recipe idea from them and what a well stocked store cupboard would contain. Only an outline of what you might cook is required. Enough to give people reading an idea of what the finished dished would be.
So moving to the challenge.

Given this list of ingredients then what would you make to feed 4?

  • 450g/1lb firm tofu
  • 1 410g/14oz can chopped tomatoes
  • 1 410g/14oz can red kidney beans
  • 1 large onion
  • 125g/4oz mushrooms
  • 1 bag basmati rice
  • garlic
  • Assume that you have a well-stocked store cupboard that contains all the herbs and spices that you may need plus vinegar and oil. No other ingredients beyond those listed though.

    What would you make?

    1. Cook the rice to al dente, chop the mushroom and onions then fry until softened, add the tomato and kidney beans plus some chilli powder then simmer to reduce the liquid.
      Slice the tofu then fry with a little soy sauce until slightly golden.
      Rice on plates then the tofu slices then the tomato and kidney bean sauce. Ready to serve!

    2. Peel and slice the onion. Drain and rinse the kidney beans. Place half into a bowl along with half the chopped onion then add vinaigrette and stick in the fridge.
      Empty the tomatoes into a pan the add about half can of stock, basil, salt and pepper to taste. Tomato soup as a starter.
      Cube the tofu then mix in a bowl with a tablespoon of soy sauce and a tablespoon of olive oil. Set aside for 30 minutes to marinade and for the rice to cook. Tip the tofu cubes into a hot pan along with the onions and mushrooms. Fry till the tofu browns a little and the veggies soften. Add garlic to taste and continue to heat for another moment or so. Put the rice and kidney into the pan and mix well. Add a little more soy sauce if it seems too dry. Heat through then ready to serve.
      Starter of tomato soup with a Bean and Tofu Stir Fry to follow.
