Pilchards on Toast

A very quick, simple supper dish. I enjoyed pilchards on toast many times when I was much younger, often after Softly Softly. Or it might have been before because, back then, us kids went to bed early.
It takes only a few minutes to prepare yet makes for a wonderful snack.

  • 1 can pilchards (in oil or in tomato sauce)
  • 4 slices bread
  • Salt
  • Pepper

  1. Put the bread under a hot grill (broiler) and leave until one side is well browned.
  2. While the bread browns, open the can of pilchards. You can get them either plain or in tomato sauce. Both work though my personal view is that the taste is better with the version in tomato sauce.
  3. Mash the pilchards with the back of a fork. This can be done with them still in the can although that tends to be a little messy. Best to put them into a small bowl and do the mashing in that.
  4. Turn the bread over on the grill pan. Divide the mashed pilchards over each untoasted side.
  5. Put back under the grill(broiler) and heat for a few minutes until the edges of the bread have crisped and the pilchards have heated thoroughly.
  6. Either cut each slice into 4 pieces and serve as finger food or ut them onto a plate to eat with a knife and fork
  7. Either way, sprinkle with a little salt and pepper according to taste.

Yes, I really did used to eat this. Toast Toppers, which came in different flavours, were better but they cost more. That meant they were restricted to more occasional use.
