This Minty Rice n Peas is especially good with a curry. The mint does just seem to add that little extra to to overall meal. Peas add some colour to the rice and also add to the vegetable content. Keeps us all on target for our 5 a day!
Rice is very easy to cook. The easiest way is to make this in the steamer while cooking the rest of the meal. This is the method in the recipe.
This Minty Rice n Peas mix can also be cooked in the pan. It actually takes less time done that way. Yet the steamer approach works very well because the whole meal is cooking in one place. That is why I prefer it. The choice is yours because the results will be just as good whichever route that you choose.
This Minty Rice n Peas can be served with many sauces. For me, it is best served with a curry. Making it in the steamer is also an easy way to combine all the meal ingredients into one place
- 50g/2oz Long Grain Rice
- Handful Peas
- 2 tsp Mint Sauce
- Put the rice into a bowl suitable for use in the steamer. Add water to cover.
- Add the peas, mint sauce and a little salt.
- Set in the lowest steamer basket then build the other parts of the meal into the higher baskets.
- Should take around 30 minutes to steam the rice.Just be sure that this is the right time for everything else. It normally is from my experience.
Peas are good for this but other vegetables could be used. Broad beans would be a good choice or carrot to vary the colour.
