You could possibly eat this as a light meal but this Cheese Sauce and Brussels is really the base for something more substantial. This was actually the base for an Egg and Bean Stuffed Sweet Potato that I was preparing at the time.
All it takes to prepare this is to cook some brussels and make up some cheese sauce. I cheated on both for this one because the cheese sauce was from a mixture and the brussels were the frozen kind. Both are simple enough to do from scratch though.
Then it is just the case of spooning some cheese sauce onto a serving plate and arranging the brussels around the edge. Add a baked sweet or regular potato into the middle and there is a delicious meal awaiting.
