Cheese and Egg Crackers

Cheesy Crackers with Egg and Cheese

Simple and quick to prepare, these Cheese and Egg Crackers make for a delicious lunch. They can also be used as a starter for a main course if desired. Extra dressing can be added too.
I use the steamer to prepare a few hard-boiled eggs in advance then chill them in the fridge. They can cook with the other vegetables so it saves on the electricity bill too.

Serves 1

  • 3 Cream Crackers
  • 2-3 teaspoons Cheese Spread
  • 1 hard-boiled Egg
  • 5 slices Smoked Cheese
  • Ground Black Pepper
  • Crushed Red Chilli or Sambal Oelek

  1. Peel then chop the onion into fairly large pieces. Place in the steamer.
  2. Remove the shell from the cold hard-boiled egg then slice. Arrange on a serving plate. I tend to nibble on the round end pieces at this point although they can also be put onto the plate.
  3. Slice the cheese and add to the plate. My preference for the cheese is a one that comes in a tube. Any that can easily be sliced can be used though.
  4. Spread each of the crackers with cheese spread.
  5. Grind some black pepper onto 2 of the crackers and spread with a knife to mix into the cheese spread. Add a little crushed chilli to the third cracker and mix that in.
  6. Add the crackers to the plate with the eggs and cheese.
  7. Lunch is ready to serve.

Mustard or Herbs are an alternative for flavouring the crackers. Use fresh herbs though because dried will simply not re-hydrate.
