Blushing Bunny

Blushing Bunny – What a perfect name for a delicious egg and cheese dish that is enhanced with stewed tomatoes. The taste is one you will never forget and readily look to make again and again!

Serves 6


  • 2½ cups stewed tomatoes
  • 1 cup shredded cheese (I prefer a strong cheddar)
  • 3 large eggs, well beaten
  • salt to taste
  • pepper to taste


  1. Heat the tomatoes and season with salt and pepper.
  2. Put in the cheese and stir until it has melted… then add eggs.
  3. Stir until thick.
  4. Serve on buttered toast.
