Blushing Bunny – What a perfect name for a delicious egg and cheese dish that is enhanced with stewed tomatoes. The taste is one you will never forget and readily look to make again and again!
- 2½ cups stewed tomatoes
- 1 cup shredded cheese (I prefer a strong cheddar)
- 3 large eggs, well beaten
- salt to taste
- pepper to taste
- Heat the tomatoes and season with salt and pepper.
- Put in the cheese and stir until it has melted… then add eggs.
- Stir until thick.
- Serve on buttered toast.
