Bacon, Egg and Potato Waffle can be viewed as an all-day meal because it suits breakfast, lunch or dinner. This is a slightly unusual way to serve it because it should really have seen the egg fried rather than hard-boiled. Still, it worked and tasted good.
It just needs a couple of rashers of bacon to be fried. Then fry the potato waffle until it is golden on both sides. Slice the hard-boiled egg then place all three onto a plate.
Serve hot with your favourite sauce. The one in the picture is a Sweet Chilli because that was what I had to hand.
